Most commonly chimney crowns are made of poured concrete and free from cracks and crumbling. As crowns withstand a lot of abuse they need to be made out of a solid material. First without the barrier the cement will just run down the chimney structure filling the airspace between the flue and the masonry walls. There are also decorative models such as copper caps which are more costly but require less maintenance.
